That is why we are going to prepare a cream of cheese and jalapeƱos to accompany the nachos, in the purest Tex-Mex style that we will enjoy at the next family or friends meeting.

It is a hot-dip that we can serve in a bowl by putting the nachos or tortilla chips around it, or that we can also serve – if we prefer – by covering with the cream of cheese and jalapeƱos a fountain filled with these portions of crispy corn tortillas.

  • 100 ml white wine vinegar

  • 2 tablespoon sunflower oil

  • Emmental cheese300 g
  • Fresh cilantro a bunch
  • Chive (the chopped green part)1

How to make cream cheese and jalapeƱos to accompany the nachos

Chop one of the jalapeƱos in rings and place it in a small bowl, to marinate it with vinegar. We can also use pickled jalapeƱos. On the other hand, we put in a saucepan the garlic cloves, the onion, and the other jalapeƱo all well chopped. Season and cook with sunflower oil until everything is poached, for about 5 or 6 minutes over low heat, stirring occasionally and preventing the onion from browning.

We add the milk and when it is very hot, we incorporate the cheese, grating it so that it melts before. You have to add the cheese little by little so that it does not go to the bottom and burn. We will always watch that it melts before incorporating a new handful until the cheese is completely melted, which will take another 10 minutes.

Once we have obtained a fluid cream, we try and rectify salt and pepper and pass it to a bowl, decorating it with a little sour cream, the green part of the very chopped scallion and the pickled jalapeƱos, finishing with some coriander leaves. We will serve the cream accompanied by the nachos or tortilla chips.
